The nylon blades flex quite a bit, which helps the quad fly much more smoothly. The CF props are much more rigid and slightly more aggressive in pitch; the quad can lift more but is a lot more prone to twitching itself into a death spiral.

It also sounds much more terrifying, and the CF blades will definitely hack a finger off.

Understeer: You will hit the wall with the front end.
Oversteer: You will hit the wall with the rear end.
Horsepower: How hard you will hit the wall.
Torque: How far you will move the wall.

Well real helicopter blades flex so I can understand. Terrifying sound would be cool. Death spiral not cool. Hacking off a finger definitely not cool at all. The RC airplane guys I used to hang with used either a start stick or electric motor starter to start the engine, but the old RC guys were quite proud of the scars on their start-up fingers. Masochists I tell you.

(Oh, and also, I'll need to borrow Spiff for a few minutes when I go to the bathroom when we get together for beer)
