I think the latch may have a little spring that pops the u-shaped piece on the deck lid up just a little tiny bit and out of the latch mechanism. My front latch started doing that (not popping up enough to get my fingers underneath to lift) so I took apart the latch and found that the spring had come undone from the holding points in the latch. Fixed the spring within the latch and now it works perfectly.

That's worth taking a look into Joe. If anything, perhaps I can replace the spring with something a little substantial to accommodate the extra weight. If all else fails....hood pins?

Latch from a Turbo? part# 996 512 053 03 and it's also specified as a replacement for NA cars.

So I fixed the issue. I added little rubber bumpers and adjusted the decklid adjustment screws. Decklid is now opening as it should.

Yeah, the bumpers are adjustable - that's what I was going to suggest, but you already got there. Similarly, adjustable stops are usually responsible for the front trunk not closing completely or rattling slightly.
Understeer: You will hit the wall with the front end.
Oversteer: You will hit the wall with the rear end.
Horsepower: How hard you will hit the wall.
Torque: How far you will move the wall.
