My mom's 15 year old Kia minivan "requires" premium. I know from experience that the 996 will handle regular "just fine", it will just feel incredibly sluggish as the anti-knock system is working over time.
I would expect the Jeep to be just fine on not-premium.
The Vette is old enough that it might actually be serious about needing the octanes for the motor to not act like total shit.

As long as the knock sensor(s) are working, "regular" is fine.
Understeer: You will hit the wall with the front end.
Oversteer: You will hit the wall with the rear end.
Horsepower: How hard you will hit the wall.
Torque: How far you will move the wall.

I "argued" with a guy in one of my facebook groups who maintained he never used premium for any of his cars, even a turbo, and never had any problems. I would think older cars would need premium less as compression falls with wear and tear and with it pre-detonation due to compression, but I just hand over my wallet. We refine a lot of gas and our gas taxes aren't too bad, so we're going to have fewer whippings than most I guess.
