Need tires....

Man the P Zero Rosso's on my car are LOUD. My ears were ringing after 150 miles. Old, too, 2010 date codes.
I need some new tires!
My car has OE 18x11 and 18x8 turbo twists, still AWD. I do not want to roll fenders. I could modify the fender liners, radiator brackets, and rear liner brackets.
My "use case" as they say is ordinary driving, highways, regular roads. Around here you're always stuck behind a RAV4 going 38 MPH. I would prefer to go with quiet and I'm willing to sacrifice ultimate performance to get that. I drive the car 3 seasons so temperatures could be from freezing up to 90-ish. I don't drive it in the snow, I even try to avoid driving it in the rain. I'm not super concerned with wet performance, low temperatures are more what I'm concerned about.
When I take the car to a DE I have a second set of OE twist rims and I would get a second set of tires. Noise and treadwear be damned!
So the question what 2 sets of tires do you use?
One set for road comfort?
One set for DE and track use?
Talking with Noah yesterday and he recommends Nitto NT01's in GT2 sizes: 315/30-18 and 235/40-18. These look great and would be good track or summer tires. They won't work when it's chilly in the spring or fall without driving a lot of heat into them first.
Other track focused tires might be RT615K, or A052's.
Regular road tires? Don't know.
