If you were caning it around that right hand bend it could be that your oil level is very low. Check your oil level with the dipstick (yeah, 996!). If it's low, top it off. +1 on usefulness of physical dipstick. Easy to replace with a longer one when the original one quits reading the oil level correctly.

My indy is a fan (ha!) of the CSF radiators. Swapping both stock radiators for CSFs plus cleaning out all the gack that accumulates at the interface of the radiators and aircon condensers would certainly boost cooling performance.

+1 on adding third radiator. When I got my 996 back from Jake Raby several years ago after getting his 3.8L Stage 1 treatment, it came with the 160F thermostat. On hard runs the coolant temps would get pretty toasty and take quite a while to come back down. Conclusion--the 160F thermostat on its own...
